Why not try drying or pressing flowers? My young son was absolutely fascinated by a collection of flowers that we pressed a while ago. You do have to wait, obviously, for the flowers to dry out or get pressed, but it's nice to give kids an activity to do that doesn't have an immediate result, and this is the wonderful charm of flower and garden related activities!

We pressed our flowers by arranging them between sheets of blotting paper, and putting them into some heavy books for a couple of weeks or longer! Weigh down the books with old telephone directories or other books.
